Pulled Pork Arepas with Avocado Crema

Ingredients
- For the Pulled Pork:
- 1 ½ lbs pork shoulder (boneless)
- 1 tsp salt
- 0.5 tsp black pepper
- 1 tsp cumin
- 0.5 tsp smoked paprika
- 3 garlic cloves, minced
- 0.5 cup onion, diced
- Juice of 1 orange
- 2 tbsp apple cider vinegar
- 1 tbsp honey
- 1 tbsp olive oil
- For the Arepas:
- 2 cups pre-cooked cornmeal (masarepa)
- 0.5 tsp salt
- 2 ½ cups warm water
- 1 tbsp vegetable oil (for cooking)
- For the Avocado Crema:
- 1 ripe avocado
- Juice of 1 lime
- 0.5 cup sour cream or Greek yogurt
- 1 garlic clove, minced
- 1 tbsp fresh cilantro
- Salt & pepper to taste
Instructions
- 11️⃣ Cook the Pork – In a slow cooker or pot, combine pork, garlic, onion, orange juice, vinegar, honey, and spices. Cook on low for 6-8 hours (or high for 4 hours) until fork-tender. Shred and mix with juices. 🐖🔥
- 22️⃣ Make the Arepas – In a bowl, mix cornmeal, salt, and warm water. Knead until a dough forms. Shape into small discs about ½ inch thick. Cook on a griddle with a little oil for 5-6 minutes per side until golden brown. 🌽✨
- 33️⃣ Blend the Avocado Crema – In a blender, combine avocado, lime juice, sour cream, garlic, and cilantro. Blend until smooth and creamy. 🥑💚
- 44️⃣ Assemble & Serve – Slice arepas in half, stuff with juicy pulled pork, and drizzle with avocado crema. Garnish with extra cilantro or pickled onions. 🌮🔥
