Ingredients

  • For the Enchiladas:
  • 8 corn tortillas 🌮
  • 2 tbsp olive oil 🫒
  • 2 cups fresh spinach, chopped 🌿
  • 1 cup shredded Oaxaca or Monterey Jack cheese 🧀
  • 0.5 cup crumbled queso fresco 🧀
  • 0.5 tsp salt 🧂
  • 0.25 tsp black pepper
  • 0.5 tsp cumin ✨
  • For the Sauce:
  • 1 tbsp olive oil 🫒
  • 0.5 small onion, diced 🧅
  • 2 cloves garlic, minced 🧄
  • 1 cup tomatillo salsa (salsa verde) 🌶️
  • 0.5 cup vegetable broth 🍲
  • 0.5 tsp oregano 🌿
  • 0.5 tsp salt 🧂
  • For Serving:
  • Fresh cilantro, chopped 🌿
  • Sour cream or Mexican crema 🥛

Instructions
