Ingredients
- For the Black Bean Filling:
- 1 cup black beans, drained and rinsed 🖤
- 0.5 small onion, finely diced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 0.5 tsp smoked paprika
- 0.5 tsp dried oregano
- 0.5 tsp salt
- 0.25 tsp black pepper
- Juice of 1 lime 🍋
- 1 tbsp olive oil
- For the Tacos:
- 8 small corn or flour tortillas
- 0.5 cup shredded lettuce
- 0.5 avocado, sliced 🥑
- 0.25 cup diced tomatoes 🍅
- 0.25 cup pickled red onions (optional)
- 0.25 cup crumbled queso fresco or feta (optional)
- Fresh cilantro, chopped for garnish 🌿
- Lime wedges for serving
Instructions
- 11️⃣ Prepare the Black Bean Filling
- 2Heat olive oil in a skillet over medium heat.
- 3Add the diced onion and garlic, sautéing for 2-3 minutes until softened.
- 4Stir in the black beans, cumin, smoked paprika, oregano, salt, and black pepper.
- 5Cook for 5 minutes, stirring occasionally, then remove from heat.
- 6Squeeze in the lime juice and mash some of the beans with the back of a spoon to create a chunky spread.

- 8Warm the tortillas in a dry skillet or microwave for 20-30 seconds.
- 9Spread a generous portion of the black bean mixture on each tortilla.
- 10Top with shredded lettuce, avocado slices, diced tomatoes, and pickled red onions if using.
- 11Sprinkle with crumbled queso fresco and garnish with fresh cilantro.
