Now, Don Luis shares his version of this classic, adding a special twist that elevates the flavors while keeping the tradition alive.

Ingredients

  • For the Quesadillas:
  • 4 large flour tortillas 🌮
  • 1 ½ cups black beans (cooked or canned, drained and rinsed) 🫘
  • 1 ½ cups shredded Oaxaca cheese (or Monterey Jack) 🧀
  • 0.5 cup crumbled queso fresco 🧀
  • 0.5 cup finely chopped white onion 🧅
  • 1 small garlic clove, minced 🧄
  • 0.5 tsp ground cumin 🌿
  • 0.5 tsp smoked paprika 🌶️
  • 0.25 tsp salt 🧂
  • 1 tbsp olive oil or butter (for cooking) 🫒🧈
  • 2 tbsp fresh cilantro, chopped (optional) 🌿
  • 1 small jalapeño, finely chopped (optional, for heat) 🌶️🔥
  • For Serving:
  • Salsa roja or salsa verde 🍅🌶️
  • Sour cream or crema Mexicana 🥛
  • Lime wedges 🍋
  • Guacamole 🥑

Instructions
