Sweet Potato and Black Bean Quesadillas

Ingredients

  • For the Filling:
  • 1 medium sweet potato, roasted & mashed
  • 1 cup black beans, drained & rinsed
  • 1 garlic clove, minced
  • 0.5 tsp cumin
  • 0.5 tsp smoked paprika
  • Salt & pepper to taste
  • 1 tbsp lime juice
  • 0.5 avocado, sliced (for serving)
  • For the Quesadillas:
  • 4 large flour tortillas
  • 1 cup shredded Oaxaca or Monterey Jack cheese
  • 1 tbsp butter or olive oil for cooking

Instructions

  1. 11️⃣ Roast & Mash the Sweet Potato – Preheat oven to 400°F (200°C). Roast the sweet potato for 30 minutes until soft. Peel and mash with a fork. 🍠🔥
  2. 22️⃣ Prepare the Black Beans – In a pan over medium heat, sauté garlic, black beans, cumin, paprika, salt, and pepper for 5 minutes. Add lime juice and mash lightly. 🖤🌿
  3. 33️⃣ Assemble the Quesadillas – Spread sweet potato mash on half of each tortilla, add black beans and cheese, then fold over. 🌮🧀
  4. 44️⃣ Cook to Perfection – Heat butter or oil in a pan over medium heat. Cook each quesadilla for 2-3 minutes per side, until crispy and golden brown. 🔥✨
  5. 55️⃣ Serve & Enjoy – Slice into wedges, top with avocado slices, and serve with salsa verde or sour cream. 🥑🌿
