Ingredients

  • For the Salad:
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 ripe avocado, diced
  • 0.5 red bell pepper, diced
  • 0.5 cup cherry tomatoes, halved
  • 0.25 red onion, finely chopped
  • 0.25 cup fresh cilantro, chopped
  • For the Dressing:
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 0.5 tsp cumin
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 tsp honey or agave syrup (optional)

Instructions

  2. 21️⃣ Drain and rinse the black beans in cold water. Dice the avocado, bell pepper, and cherry tomatoes, and finely chop the red onion and cilantro. 🫘🍅🌿
