Mofongo Breakfast Scramble

Prep: 15 min ⏱️Cook: , Calories, and CostTotal: 35 min

Story

Don Luis was already up before the rooster that morning. As he peeled the green plantains, he smiled, remembering Sunday mornings back in Bayamón when breakfast meant *business*. No cereal here—this was a *hearty* Puerto Rican desayuno built to power you through dancing, chores, or just a long nap afterward. He smashed the golden tostones in a pilón, folded in garlic and crunchy chicharrón, then topped it with scrambled eggs, sofrito-sautéed veggies, and just the right amount of queso. “It’s not just breakfast,” he chuckled, “It’s an anthem in a bowl.” The smell alone brought the whole house to the kitchen. Ingredients

  • 3 green plantains (peeled and sliced) 🍌
  • 4 cloves garlic (mashed) 🧄
  • 0.5 cup pork cracklings or bacon (chopped) 🥓
  • 4 large eggs 🥚
  • 0.25 cup onion (diced)
  • 0.25 cup red bell pepper (diced)
  • 0.25 cup green pepper (diced)
  • 1 tbsp sofrito (optional, but magical) ✨
  • 0.25 cup shredded cheddar or queso blanco 🧀
  • Salt & pepper to taste 🧂
  • Oil for frying and cooking

Instructions

  1. 1Fry the plantains: In hot oil, fry the plantain slices until golden and tender. Drain on paper towels.
  2. 2Smash it up: In a large bowl or pilón, mash the fried plantains with garlic and pork cracklings until well combined. Add a little oil if it’s too dry.
  3. 3Sauté veggies: In a pan, cook onions, peppers, and sofrito in a drizzle of oil until soft and fragrant.
  4. 4Add eggs: Crack in the eggs and scramble into the veggie mix. Cook until just set.
  5. 5Combine: Spoon the egg scramble over a scoop of mofongo. Top with shredded cheese and let it melt!
  6. 6Serve hot: Garnish with extra chicharrón, avocado slices 🥑, or a sprinkle of cilantro if you’re feeling fancy!
