Ingredients
- For the Sauce:
- 2 ripe tomatoes, finely chopped
- 0.5 small onion, finely diced
- 1 garlic clove, minced
- 1 ají dulce or jalapeño, finely chopped (adjust for spice level)
- 1 tbsp tomato paste
- 0.5 tsp cumin
- 0.5 tsp smoked paprika
- Salt & pepper to taste
- 0.5 cup chicken or vegetable broth
- 1 tbsp olive oil
- 2 tbsp fresh cilantro, chopped
- For the Huevos Rancheros:
- 4 corn tortillas
- 4 large eggs
- 0.5 cup refried beans, warm
- 0.5 cup queso fresco or crumbled cotija cheese
- 0.5 avocado, sliced
- 0.5 cup salsa verde (*optional but adds extra depth*)
- 2 tbsp Mexican crema or sour cream
- 1 tbsp butter or oil for frying
Instructions

- 2Heat olive oil in a pan over medium heat. Sauté onion, garlic, and ají dulce until fragrant. 🌿
- 3Stir in tomato paste, cumin, smoked paprika, salt, and pepper. Add chopped tomatoes and broth, then simmer for 10 minutes, stirring occasionally. Finish with fresh cilantro. 🍅✨
