Ingredients

  • For the Tostones
  • 3 green plantains (peeled and cut into 1-inch rounds) 🍌
  • Oil for frying 🛢️
  • Salt to taste 🧂
  • For the Pulled Pork
  • 2 cups cooked pulled pork (moist and tender) 🐖
  • 0.5 tsp cumin
  • 0.5 tsp oregano
  • Salt and pepper to taste
  • For the Mojo Sauce
  • 0.25 cup olive oil 🫒
  • 6 garlic cloves (minced) 🧄
  • 0.25 cup orange juice 🍊
  • 2 tbsp lime juice 🍋
  • 1 tbsp chopped fresh cilantro (optional) 🌿
  • Salt to taste

Instructions

  1. 1Fry once: Heat oil in a pan. Fry plantain slices for about 4 minutes until light golden. Remove and drain.
  2. 2Smash them: Use the bottom of a glass or tostonera to flatten each piece.
  3. 3Fry again: Return smashed plantains to the oil and fry until crispy and golden brown. Drain and season with salt.
  4. 4Warm the pork: Reheat pulled pork in a pan with cumin, oregano, salt, and pepper. Set aside.
  5. 5Make the mojo: Heat olive oil in a small pan, add garlic and cook until fragrant. Remove from heat, stir in citrus juices and cilantro. Season to taste.
  6. 6Assemble: Top each toston with a spoonful of pork, then drizzle with mojo sauce. Serve immediately with lime wedges on the side!
