Ingredients
- For the Garlic Butter Shrimp
- 5 lbs raw shrimp (peeled and deveined) 🍤
- 4 garlic cloves, minced 🧄
- 3 tbsp butter 🧈
- 1 tbsp olive oil 🫒
- 1 tbsp lime juice 🍋
- Salt & pepper to taste
- Chopped parsley or cilantro for garnish 🌿
- For the Rice and Beans
- 2 cups cooked white rice 🍚
- 1 can black or red beans (drained and rinsed) 🫘
- 0.25 onion, finely chopped
- 1 garlic clove, minced
- 1 tbsp olive oil
- Salt, pepper, and a pinch of cumin
Instructions
- 1Garlic Butter Shrimp:
- 2Heat butter and oil in a large skillet over medium-high heat.
- 3Add garlic and cook for 30 seconds until fragrant.
- 4Toss in shrimp, season with salt and pepper, and cook 2–3 minutes per side until pink and cooked through.
- 5Squeeze lime juice over shrimp and garnish with parsley or cilantro.
- 6Rice and Beans:
- 7In a separate pan, heat olive oil and sauté onion and garlic until soft.
- 8Add beans and season with salt, pepper, and cumin.
- 9Stir in cooked rice and mix until heated through.
