Black Bean Quesadillas with Fresh Salsa

He’d mash the beans with a little sazón, tuck them into tortillas with shredded cheese, and toast them until golden and melty. But he didn’t stop there. Ingredients
- For the Quesadillas
- 8 small flour tortillas 🌮
- 1 1/2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
- 1 (15 oz) can black beans, drained and rinsed 🫘
- 1 garlic clove, minced
- 0.5 tsp cumin
- 0.25 tsp oregano
- Salt & pepper to taste
- 1 tbsp olive oil or butter for toasting
- For the Fresh Salsa
- 2 ripe tomatoes, diced 🍅
- 0.25 red onion, finely chopped
- Juice of 1 lime 🍋
- 2 tbsp chopped cilantro 🌿
- Salt to taste
- Optional: 1 jalapeño, minced (for heat)
Instructions
- 1Make the Bean Filling:
- 2In a bowl, mash black beans slightly. Stir in garlic, cumin, oregano, salt, and pepper.
- 3Make the Salsa:
- 4Mix tomatoes, red onion, cilantro, lime juice, salt, and jalapeño (if using). Set aside.
- 5Assemble & Cook the Quesadillas:
- 6On one tortilla, spread a layer of beans and sprinkle cheese on top. Cover with another tortilla.
- 7Heat a skillet with a little oil or butter. Toast quesadillas over medium heat until golden and cheese is melted (about 2–3 min per side).
- 8Slice into wedges and serve with salsa on the side—or right on top!
