Ingredients

  • For the Wrap Filling
  • 2 medium sweet potatoes, peeled and cubed 🍠
  • 1 tbsp olive oil
  • 0.5 tsp cumin
  • 0.5 tsp smoked paprika
  • Salt & pepper to taste
  • 1 (15 oz) can black beans, drained and rinsed 🫘
  • 0.25 red onion, finely diced
  • 0.5 cup shredded lettuce or baby spinach
  • For the Cilantro-Lime Crema (optional but delicious)
  • 0.5 cup plain Greek yogurt or sour cream
  • Juice of 1 lime 🍋
  • 2 tbsp chopped cilantro 🌿
  • Pinch of salt
  • Assembly
  • 4 large flour tortillas 🌯
  • Optional toppings: avocado slices, hot sauce, shredded cheese

Instructions

  1. 1Roast the Sweet Potatoes:
  2. 2Toss sweet potato cubes with olive oil, cumin, paprika, salt, and pepper.
  3. 3Roast at 400°F (200°C) for 25 minutes, flipping halfway, until tender and lightly caramelized.
  4. 4Prepare the Beans & Crema:
  5. 5While potatoes roast, mix black beans with red onion and a pinch of salt.
  6. 6For crema: mix yogurt/sour cream with lime juice, cilantro, and salt.
  7. 7Assemble the Wraps:
  8. 8Warm tortillas slightly.
  9. 9Layer sweet potatoes, black beans, greens, crema, and any extras.
  10. 10Roll tightly, slice in half, and serve warm or chilled!
