Sweet Potato and Black Bean Wraps
Story

Ingredients
- For the Wrap Filling
- 2 medium sweet potatoes, peeled and cubed 🍠
- 1 tbsp olive oil
- 0.5 tsp cumin
- 0.5 tsp smoked paprika
- Salt & pepper to taste
- 1 (15 oz) can black beans, drained and rinsed 🫘
- 0.25 red onion, finely diced
- 0.5 cup shredded lettuce or baby spinach
- For the Cilantro-Lime Crema (optional but delicious)
- 0.5 cup plain Greek yogurt or sour cream
- Juice of 1 lime 🍋
- 2 tbsp chopped cilantro 🌿
- Pinch of salt
- Assembly
- 4 large flour tortillas 🌯
- Optional toppings: avocado slices, hot sauce, shredded cheese
Instructions
- 1Roast the Sweet Potatoes:
- 2Toss sweet potato cubes with olive oil, cumin, paprika, salt, and pepper.
- 3Roast at 400°F (200°C) for 25 minutes, flipping halfway, until tender and lightly caramelized.
- 4Prepare the Beans & Crema:
- 5While potatoes roast, mix black beans with red onion and a pinch of salt.
- 6For crema: mix yogurt/sour cream with lime juice, cilantro, and salt.
- 7Assemble the Wraps:
- 8Warm tortillas slightly.
- 9Layer sweet potatoes, black beans, greens, crema, and any extras.
- 10Roll tightly, slice in half, and serve warm or chilled!
