Tostones with Black Bean and Avocado Salsa
Story
Tostones were Don Luis’s first love—*“green, stubborn, and perfect when treated right,”* he’d joke. But one day, he skipped the traditional garlic mojo and made something lighter: a black bean and avocado salsa that danced with lime and cilantro. As he layered the salsa onto the golden plantain rounds, he smiled and said, *“See? Even the old favorites like to try something new.”* And just like that, a fresh twist was born on a classic. Ingredients
- For the Tostones
- 3 green plantains, peeled and sliced into thick rounds 🍌
- Oil for frying
- Salt to taste
- For the Black Bean & Avocado Salsa
- 1 (15 oz) can black beans, drained and rinsed 🫘
- 1 ripe avocado, diced 🥑
- 0.25 cup red onion, finely chopped
- 1 tomato, diced
- Juice of 1 lime 🍋
- 2 tbsp chopped cilantro 🌿
- Salt & pepper to taste
Instructions
- 1Make the Tostones:
- 2Fry plantain slices in hot oil for 2–3 minutes until just golden. Remove and flatten with a tostonera or the bottom of a mug.
- 3Return to oil and fry again until crispy. Drain and sprinkle with salt.
- 4Make the Salsa:
- 5In a bowl, combine black beans, avocado, tomato, red onion, cilantro, lime juice, salt, and pepper.
- 6Mix gently so the avocado stays chunky.
- 7Assemble:
- 8Spoon salsa onto each tostone right before serving, or serve salsa in a bowl for dipping.
