Black Bean and Spinach Tacos
Story
The first time Don Luis made these tacos, it was a rainy afternoon and his granddaughter didn’t want to eat her greens. He smiled, put on his signature jean-and-leather apron (with “Don Luis” stitched across the chest), and told her, *“Let me show you how even spinach can be your best amigo in a taco.”* 🥬🌮 With the smell of sizzling garlic in the air and salsa beats in the background, Don Luis built little tacos filled with sautéed spinach, creamy black beans, and a touch of love. Instructions
- 1Warm the oil in a skillet over medium heat. Add garlic and red onion, and sauté until fragrant (about 2 minutes).
- 2Add the black beans and season with salt, pepper, and chili powder. Cook for 5 minutes until heated through.
- 3Toss in the fresh spinach and stir until wilted (2–3 minutes).
- 4In a separate pan or over an open flame, warm the tortillas until soft and lightly toasted.
- 5Assemble the tacos: spoon the black bean and spinach mixture into each tortilla. Top with cheese, avocado slices, and a squeeze of lime.
- 6Serve with a big smile and your favorite salsa! 🧡
