Instructions

  1. 1Make the Filling
  2. 2In a saucepan, melt butter over medium heat. Add onions and cook until translucent (about 3 min). Add flour and stir constantly for 1–2 min to form a roux.
  3. 3Add Milk
  4. 4Slowly whisk in warm milk until smooth and thick. Stir in shredded chicken, nutmeg, salt, and pepper. Cook for 2 more minutes. Let cool, then refrigerate for at least 1 hour until firm.
  5. 5Form and Coat
  6. 6With wet hands, shape chilled mixture into small logs or balls. Dip each into egg, then coat in breadcrumbs. Chill for 15 minutes.

  8. 8Heat oil in a deep pan to 350°F (175°C). Fry croquetas in batches until golden brown (2–3 min). Drain on paper towels.

  10. 10Blend cilantro, sour cream, garlic, lime juice, olive oil, and salt until creamy and bright green. Chill until ready to serve.
