Season 10 - Breakfast / S10B01

Mallorca Bread with Café con Leche

Prep: 2 hrs 30 min (includes rise time)Cook: 20 minTotal: 2 hrs 50 min

Story

Every Sunday morning, the house smelled like sunshine and sugar. Don Luis would roll out the dough with a soft whistle, wearing his signature jean-and-leather apron, dusted with flour and joy. His grandchildren would sit at the table, their sleepy eyes lighting up the moment he placed the golden, spiral-shaped *Mallorca* on their plates. Paired with a steamy *café con leche*, the bread was more than breakfast — it was tradition. Sweet, pillowy, and warm, each bite was like a hug from *abuelito*. And just like that, Sunday began with laughter, powdered sugar mustaches, and the comforting hum of memories in the making. Time, Calories & Cost

Ingredients

  • For the Mallorca Bread 🥯
  • 3 ½ cups all-purpose flour 🌾
  • 1 packet (2 ¼ tsp) active dry yeast 🧫
  • 0.5 cup warm milk (110°F) 🥛
  • 3 large eggs 🥚
  • 0.5 cup sugar 🍬
  • 1 tsp salt 🧂
  • 0.5 cup unsalted butter, softened 🧈
  • Powdered sugar for dusting ❄️
  • For Café con Leche ☕
  • 1 cup strong brewed coffee or espresso ☕
  • 1 cup milk, steamed or heated 🥛
  • Sugar to taste 🍯

Instructions

  1. 1Step 1: Activate the yeast by mixing it with warm milk and a pinch of sugar. Let it sit for 10 minutes until bubbly.
  2. 2Step 2: In a large bowl, whisk together eggs, sugar, and salt. Add the yeast mixture and stir gently. Gradually mix in the flour and knead until smooth (about 10 minutes by hand or 5 with a mixer).
  3. 3Step 3: Add the softened butter and knead again until fully incorporated. Cover the bowl with a clean towel and let the dough rise in a warm place for 1 ½ hours or until doubled in size.
  4. 4Step 4: Punch down the dough and divide it into 8 equal pieces. Roll each into a long rope and coil into a spiral. Place on a parchment-lined tray and let rise for another 45 minutes.
  5. 5Step 5: Preheat oven to 350°F (175°C). Bake the rolls for 15–20 minutes or until golden. Cool slightly and dust generously with powdered sugar.
  6. 6Step 6: Brew your coffee and heat the milk. Combine 1:1 for the perfect café con leche. Sweeten as you like.
  7. 7Step 7: Serve warm *Mallorca* bread with café con leche and enjoy every cozy bite! ☀️
