Mallorcas with Guava Jelly and Queso Blanco
Story
When Don Luis was a little boy, his abuela would wake up early, dusting sugar over warm mallorcas and slicing thick pieces of queso blanco like it was gold. But it wasn’t the cheese or the sugar that made it special — it was the guava jelly, bright and sticky, that she spooned on with so much love ❤️. Now in his own kitchen, wearing his signature jean-and-leather apron, Don Luis passes on the tradition. Ingredients
- 4 sweet mallorca rolls or soft brioche buns 🍞
- 4 tbsp guava jelly or guava paste, softened 🍓
- 4 thick slices queso blanco or mild white cheese 🧀
- 2 tbsp unsalted butter, room temperature 🧈
- Powdered sugar for dusting ❄️
Instructions
- 1Slice the rolls in half and lightly butter the insides.
- 2Heat a skillet or griddle over medium-low. Toast the buttered sides until golden 🟤.
- 3Spread guava jelly on the bottom half of each bun. Don’t be shy — we want that tropical flavor to sing! 🎵
- 4Add a slice of queso blanco on top of the jelly. If you prefer it slightly melty, toss it under a broiler for 1–2 minutes.
- 5Top with the other half of the bun and press gently.
- 6Dust with powdered sugar like it’s snowing on the island ⛱️❄️.
- 7Serve immediately with a smile and maybe a cold glass of pineapple juice 🍍🥤.
