Every Sunday morning, Don Luis would wake up before the rooster 🐓, tie his signature jean-and-leather apron, and hum an old salsa tune as he prepared *Pan de Mallorca* — the sweet, soft bread that brought his whole family to the kitchen table. He’d gently roll the dough with love and laughter, telling stories about his childhood in Puerto Rico, when he’d run to the corner bakery and ask for the biggest Mallorca they had. Ingredients
- 4 cups all-purpose flour 🌾
- 0.67 cup whole milk 🥛 (warm, around 110°F)
- 2½ tsp active dry yeast 🌿
- 0.25 cup warm water 💧
- 0.5 cup sugar + extra for dusting 🍬
- 3 large eggs 🥚
- 0.5 tsp salt 🧂
- 0.5 cup unsalted butter, melted 🧈
- Powdered sugar (for dusting) ❄️
Instructions
- 1Activate the yeast: In a small bowl, combine warm water, 1 tbsp sugar, and yeast. Let it sit for 5–10 min until foamy.
- 2Make the dough: In a large bowl, whisk the warm milk, eggs, remaining sugar, salt, and melted butter. Add in the foamy yeast. Slowly add flour, mixing until dough forms.
- 3Knead: Knead the dough on a floured surface for 10 minutes until smooth and elastic. Add a little more flour if sticky.
- 4Let it rise: Place dough in a greased bowl, cover with a towel, and let rise for 1½ hours or until doubled in size ⏳
- 5Shape the rolls: Roll dough into a rectangle, about ¼ inch thick. Cut into 1-inch wide strips, then roll each strip into a spiral. Place them on a baking sheet lined with parchment.
- 6Second rise: Cover the shaped rolls and let them rise again for 30 minutes.
- 7Bake: Preheat oven to 375°F (190°C). Bake rolls for 12–15 minutes or until lightly golden 🌟
- 8Dust with magic: Once cooled slightly, generously sprinkle powdered sugar on top like you’re summoning joy 😄❄️
