Ingredients
- 6 large eggs
- 0.5 lb Mexican chorizo (remove casing)
- 1 cup shredded Monterey Jack or Oaxaca cheese
- 0.25 cup finely chopped onions
- 1 garlic clove, minced
- 1 tbsp chopped cilantro (optional)
- Salt & pepper to taste
- 10 empanada discs (store-bought or homemade)
- 1 egg (for egg wash)
- Cooking oil spray or brush of olive oil
Instructions
- 1Cook the Chorizo: In a skillet over medium heat, cook the chorizo until browned and slightly crispy (about 5–7 mins). Add garlic and onions, and sauté for 2 more minutes. Set aside.
- 2Scramble the Eggs: In a bowl, whisk the eggs with a pinch of salt and pepper. Lightly scramble them in a separate pan—keep them soft and creamy. Remove from heat.
- 3Combine Fillings: Mix the eggs, chorizo mixture, cheese, and cilantro in a bowl. Let it cool for a few minutes.
- 4Fill the Empanadas: Place a spoonful of filling in the center of each empanada disc. Fold and crimp edges with a fork to seal.
- 5Bake or Air Fry: Brush each empanada with egg wash.
- 6To bake: Preheat oven to 375°F (190°C). Bake for 20–25 minutes until golden brown.
- 7To air fry: Preheat to 370°F (188°C). Air fry in batches for 10–12 minutes.
- 8Cool & Serve: Let them rest 5 minutes. Serve with salsa or avocado dip 🥑!
