Ingredientes
- 6 grande eggs
- 0.5 lb mexicano chorizo (remove casing)
- 1 cup shredded Monterey Jack o Oaxaca queso
- 0.25 cup finamente picado cebollas
- 1 ajo clove, minced
- 1 tbsp picado cilantro (opcional)
- sal & pepper to taste
- 10 empanada discs (store-bought o homemade)
- 1 egg (para egg wash)
- Cooking oil spray o brush de aceite de oliva
Instrucciones
- 1cocina the Chorizo: In a sartén over fuego medio, cocina the chorizo until browned y slightly crispy (about 5–7 mins). Add ajo y cebollas, y saltea para 2 more minutes. reserva.
- 2Scramble the Eggs: In a bowl, bate the eggs con a pinch de sal y pepper. Lightly scramble them in a separate pan—keep them soft y creamy. Remove from calienta.
- 3Combine Fillings: Mix the eggs, chorizo mixture, queso, y cilantro in a bowl. Let it cool para a few minutes.
- 4Fill the Empanadas: Place a spoonful de filling in the center de each empanada disc. Fold y crimp edges con a fork to seal.
- 5Bake o Air Fry: Brush each empanada con egg wash.
- 6To bake: Preheat oven to 375°F (190°C). Bake para 20–25 minutes until golden brown.
- 7To air fry: Preheat to 370°F (188°C). Air fry in batches para 10–12 minutes.
- 8Cool & sirve: Let them rest 5 minutes. sirve con salsa o avocado dip 🥑!
