Ingredients
- 2 green plantains (peeled and sliced into 1.5-inch chunks)
- Salt (to taste)
- Garlic powder (a pinch)
- Cooking oil (for frying)
- 2 large eggs
- 2 slices of cheddar cheese (or cheese of choice)
- 4 slices of turkey bacon or regular bacon
- Optional: lettuce or arugula
- Optional: tomato slices
- Optional: avocado slices or smashed
- Optional: hot sauce or mayo-ketchup spread
Instructions
- 1Fry the Plantains (First Fry)
- 2Heat oil in a skillet over medium heat. Fry the plantain chunks for 4–5 minutes until slightly golden. Remove and flatten them with a tostonera or the bottom of a cup.
- 3Fry the Tostones Again (Second Fry)
- 4Return the flattened plantains to the hot oil. Fry 2–3 minutes per side until crispy and golden brown. Remove and sprinkle with salt and a pinch of garlic powder.
- 5Cook the Bacon & Eggs
- 6In a separate pan, cook bacon until crispy. Set aside. In the same pan, fry the eggs sunny-side up (or your style of choice).
- 7Assemble the Sandwich
- 8Lay one crispy tostón down as the “bottom bun.” Stack cheese, bacon, egg, and any extras like avocado, tomato, or greens. Top with the second tostón.
- 9Serve It Up
- 10Serve warm with a side of fruit, a smoothie, or even a mini café con leche! ☕🍓
