Season 10 - Lunch / S10L06
Peruvian Ceviche
Story
Under the warm glow of his rustic kitchen, Don Luis stood by the window zesting limes, humming a Salsa chill beat. “You know,” he said, “when I was your age, we made ceviche barefoot on the beach. The waves were the only timers we needed!” 🌊 With a grin, he sliced fresh sea bass, his apron catching a splash of citrus. He remembered how *Abuelo Carlos* used to tell him, “Fresh fish never lies.” That was the secret. No frills, just the ocean’s flavor kissed by lime and heat from peppers. Today, Don Luis passes down the same tradition—this time with his grandson adding the final sprigs of cilantro 🌿, creating a ceviche so fresh it danced in your mouth like a coastal breeze. Time & Nutrition
Ingredients
- 1 lb fresh sea bass or snapper, diced into small cubes
- 10–12 key limes (or 6 large limes), juiced
- 1 small red onion, thinly sliced
- 1 red chili pepper (like ají limo or Fresno), finely chopped
- 1 handful fresh cilantro, chopped
- Salt, to taste
- Optional: 1 garlic clove, crushed (for extra kick)
- Optional sides: slices of boiled sweet potato or corn on the cob
Instructions
- 1Cure the Fish: Place diced fish in a glass bowl. Pour freshly squeezed lime juice over until fully covered. Let sit for 15 minutes in the fridge. It should turn opaque (that’s your cue it’s “cooked”) ✨.
- 2Slice and Soak: While the fish cures, slice red onion and soak in cold salted water to reduce sharpness.
- 3Mix It All Up: Drain the fish slightly (but keep some juice—hello, *leche de tigre!* 🐯), and add the onions, chopped chili, cilantro, and salt. Mix gently.
- 4Optional Kick: Add crushed garlic for extra flavor or serve with sweet potato and corn for tradition.
- 5Serve Cold: Spoon into small bowls or cups and garnish with extra lime or herbs.
