Ingredients
- 4 green plantains (for tostones)

- 1 cup cooking oil (for frying)
- 2 cups slow-cooked pulled pork (use leftovers or store-bought)
- 1 cup shredded mozzarella or cheddar cheese
- 0.5 cup diced red onion
- 0.5 cup chopped tomatoes

- Fresh cilantro for garnish

Instructions
- 1Prepare the Tostones: Peel and cut plantains into thick slices. Fry them in oil over medium heat until golden (about 3–4 minutes each side).
- 2Remove and smash each piece with a tostonera (or bottom of a mug). Return to oil and fry again until crispy. Drain on paper towels and sprinkle with salt.

- 5Add the Cheese: Sprinkle the shredded cheese over the pork.
