Ingredients

  • For the Tostones:
  • 2 green plantains 🍌🍌
  • 1½ cups vegetable oil (for frying) 🛢️
  • Salt to taste 🧂
  • For the Garlic Shrimp:
  • 1 lb raw shrimp, peeled and deveined 🍤
  • 4 garlic cloves, minced 🧄🧄🧄🧄
  • 3 tbsp olive oil 🫒
  • 1 tbsp butter 🧈
  • 0.5 tsp paprika 🌶️
  • 0.5 tsp oregano 🌿
  • Juice of 1 lime 🍋
  • Salt and pepper to taste 🧂⚫

Instructions

  1. 1Prep the Plantains: Peel and slice plantains into 1-inch chunks.
  2. 2First Fry: Heat oil in a pan over medium heat. Fry plantain slices for 4–5 minutes until light golden. Remove and drain on paper towels.
  3. 3Smash Time! Flatten each piece gently using a tostonera or the bottom of a glass.
  4. 4Second Fry: Return flattened tostones to the oil and fry again until crispy and golden (about 3 more minutes). Sprinkle with salt and set aside.
  5. 5Garlic Shrimp: In a separate pan, heat olive oil and butter over medium heat. Add garlic and cook until fragrant (about 30 seconds).
  6. 6Add shrimp, paprika, oregano, lime juice, salt, and pepper. Cook until shrimp are pink and curled (about 3–4 minutes).
  7. 7Spoon garlicky shrimp mixture over hot tostones.
