  2. 2In a saucepan, bring water, butter, and salt to a boil. Remove from heat, then slowly whisk in the cornmeal until thick and doughy. Fold in the shredded cheese. Let it cool until it’s safe to handle.

  4. 4Grab a spoonful of dough and roll into a cigar shape (about 3–4 inches long). Repeat until done.

  6. 6Heat oil to 350°F (175°C). Fry sorullitos in batches until golden and crispy—about 3–4 minutes each. Drain on paper towels.

  8. 8In a small saucepan, melt butter. Whisk in flour to form a roux. Slowly add milk, stirring constantly until smooth. Add cheese, stir until creamy. Season to taste.
