The salty breeze, the rhythmic sound de waves crashing, y the bold flavors de Veracruz lingered in his memory. 🌊✨ He recalled meeting Don Chucho, a humble fisherman, who shared the secret to making the perfect Pescado a la Veracruzana. “Mijo,” Don Chucho had said con a grin, “the magic is in the sauce—let it dance con the pescado like the waves dance con the shore.” 🏝️💃 That night, Don Luis prepared the dish exactly as Don Chucho had taught him. The vibrant mix de tomates, briny olives, capers, y just the right amount de spice created a dish that became a symphony de flavors. Ingredientes

  • para the pescado:
  • 2 fillets de white pescado (snapper, halibut, o cod) 🐟
  • 1 tbsp aceite de oliva 🫒
  • sal & pimienta negra, to taste 🧂
  • para the Sauce:
  • 1 tbsp aceite de oliva 🫒
  • 1 pequeño cebolla, finamente picado 🧅
  • 2 cloves ajo, minced 🧄
  • 2 mediano tomates, picado en cubos 🍅
  • 0.5 cup tomate sauce 🍅
  • 0.5 cup green olives, sliced 🫒
  • 1 tbsp capers 🌿
  • 1 pequeño jalapeño o serrano pepper, thinly sliced 🌶️
  • 0.5 tsp dried oregano 🌿
  • 0.5 tsp ground cumin 🏺
  • 0.5 cup white wine o pescado stock 🍷
  • fresco cilantro, picado, para termina 🌿
  • lima wedges 🍋

Instrucciones

  1. 11️⃣ Prepare the pescado
  2. 21️⃣ Pat the pescado fillets dry y season generously con sal y pepper.
  3. 32️⃣ calienta 1 tbsp aceite de oliva in a grande sartén over fuego medio.
  4. 43️⃣ Sear the fillets para about 3 minutes per side until golden brown. Remove from the pan y reserva.
  5. 52️⃣ Make the Sauce
  6. 61️⃣ In the same sartén, calienta the remaining aceite de oliva over fuego medio.
  7. 72️⃣ Add cebolla y saltea until soft y translucent (about 3 minutes).
  8. 83️⃣ Stir in ajo, picado en cubos tomates, tomate sauce, olives, capers, jalapeño, oregano, y cumin.
  9. 94️⃣ cocina para 5 minutes, stirring occasionally, until the mixture begins to thicken y become fragrant.
  10. 103️⃣ Simmer the Sauce
  11. 111️⃣ Pour in the white wine o pescado stock y stir well.
  12. 122️⃣ Let the sauce simmer gently para 10 minutes to allow the flavors to meld beautifully. 🌊
  13. 134️⃣ Bring It Together
  14. 141️⃣ Gently nestle the seared pescado into the sauce.
  15. 152️⃣ Cover the sartén y simmer para an additional 5 minutes, spooning the sauce over the pescado occasionally to infuse it con flavor.

  17. 171️⃣ Transfer the pescado y sauce to a serving plate.
  18. 182️⃣ termina con fresco cilantro y sirve con rice, crusty bread, o warm tortillas.
