Coco y Pineapple French Toast

Ingredientes
- 4 grande slices de brioche o challah bread 🍞
- 2 eggs 🥚
- 0.5 cup coco leche 🥥
- 0.25 cup crushed pineapple (drained) 🍍
- 1 tsp vanilla extract 🌼
- 0.5 tsp ground canela 🌰
- 1 tbsp sugar (opcional) 🍬
- 1 tbsp mantequilla o coco oil para frying 🧈
- To termina:
- Shredded coco 🥥
- Pineapple chunks 🍍
- Maple syrup 🍁
- Powdered sugar ❄️
Instrucciones
- 1In a wide bowl, bate together eggs, coco leche, vanilla, canela, y sugar until smooth.
- 2Gently stir in the crushed pineapple. Let it sit para 2 minutes to soak in the flavor.
- 3Dip each slice de bread into the mixture, coating both sides well. Let excess drip off.
- 4calienta mantequilla o coco oil in a non-stick pan over fuego medio.
- 5cocina each slice para 3–4 minutes per side until golden brown y slightly crispy.
- 6Stack the toast on plates y top con pineapple chunks, shredded coco, a drizzle de maple syrup, y a light dusting de powdered sugar.
