Guineo y Coco French Toast

This morning, Don Luis was humming an old tune while cracking eggs y slicing ripe guineos. As the sweet smell de coco wafted through the kitchen, he looked over his shoulder y said, *“You know, when I was little, my abuelita used to make this para us after church. Ingredientes
- 4 slices de brioche o white bread 🍞
- 2 ripe guineos, sliced 🍌
- 2 grande eggs 🥚
- 0.33 cup coco leche 🥥
- 0.5 tsp ground canela 🌰
- 0.5 tsp vanilla extract 🍨
- 1 tbsp brown sugar 🍯
- 2 tbsp shredded sweetened coco 🥥
- 1 tbsp mantequilla (para the pan) 🧈
- Maple syrup (opcional topping) 🍁
- Powdered sugar (opcional) ❄️
Instrucciones
- 1In a mixing bowl, bate together the eggs, coco leche, canela, vanilla extract, y brown sugar.
- 2Dip each slice de bread into the mixture, letting it soak para a few seconds on each side.
- 3calienta mantequilla in a non-stick sartén over fuego medio.
- 4cocina the soaked bread slices para 2–3 minutes per side, o until golden brown.
- 5In the last minute de cooking, add guineo slices to the pan y sear until caramelized.
- 6Sprinkle shredded coco on top de the toast y let it toast para 30 seconds.
- 7sirve warm con guineo slices on top, a drizzle de maple syrup, y a dusting de powdered sugar if desired.
