Banana and Coconut French Toast

Ingredients

  • 4 slices of brioche or white bread 🍞
  • 2 ripe bananas, sliced 🍌
  • 2 large eggs 🥚
  • 0.33 cup coconut milk 🥥
  • 0.5 tsp ground cinnamon 🌰
  • 0.5 tsp vanilla extract 🍨
  • 1 tbsp brown sugar 🍯
  • 2 tbsp shredded sweetened coconut 🥥
  • 1 tbsp butter (for the pan) 🧈
  • Maple syrup (optional topping) 🍁
  • Powdered sugar (optional) ❄️

Instructions

  1. 1In a mixing bowl, whisk together the eggs, coconut milk, cinnamon, vanilla extract, and brown sugar.
  2. 2Dip each slice of bread into the mixture, letting it soak for a few seconds on each side.
  3. 3Heat butter in a non-stick skillet over medium heat.
  4. 4Cook the soaked bread slices for 2–3 minutes per side, or until golden brown.
  5. 5In the last minute of cooking, add banana slices to the pan and sear until caramelized.
  6. 6Sprinkle shredded coconut on top of the toast and let it toast for 30 seconds.
  7. 7Serve warm with banana slices on top, a drizzle of maple syrup, and a dusting of powdered sugar if desired.
