Coconut and Pineapple French Toast
Story

Ingredients
- 4 large slices of brioche or challah bread 🍞
- 2 eggs 🥚
- 0.5 cup coconut milk 🥥
- 0.25 cup crushed pineapple (drained) 🍍

- 1 tbsp sugar (optional) 🍬
- 1 tbsp butter or coconut oil for frying 🧈

Instructions
- 1In a wide bowl, whisk together eggs, coconut milk, vanilla, cinnamon, and sugar until smooth.
- 2Gently stir in the crushed pineapple. Let it sit for 2 minutes to soak in the flavor.
- 3Dip each slice of bread into the mixture, coating both sides well. Let excess drip off.
- 4Heat butter or coconut oil in a non-stick pan over medium heat.
- 5Cook each slice for 3–4 minutes per side until golden brown and slightly crispy.
- 6Stack the toast on plates and top with pineapple chunks, shredded coconut, a drizzle of maple syrup, and a light dusting of powdered sugar.
