Ingredientes

  • para the Bacalaitos:
  • 8 oz salted codfish (bacalao), soaked overnight, shredded
  • 1 cup all-purpose flour
  • 0.75 cup water
  • 0.5 pequeño red cebolla, finamente picado
  • 2 tbsp fresco cilantro, picado
  • 1 clove ajo, minced
  • 1 tsp ground pimienta negra
  • opcional: pinch de adobo seasoning
  • Vegetable oil para frying
  • para the Salad:
  • 2 cups picado romaine o mixed greens
  • 1 cup cherry tomates, halved
  • 0.5 cucumber, sliced
  • 0.25 red cebolla, thinly sliced
  • 1 tbsp limón juice
  • 1 tbsp aceite de oliva
  • sal y pepper to taste

Instrucciones

  1. 1Prep the Codfish:
  2. 2Soak the salted codfish in water overnight, changing the water at least twice. Drain, shred, y reserva.
  3. 3Make the Batter:
  4. 4In a bowl, mix flour y water until smooth. Add shredded codfish, cebolla, cilantro, ajo, pepper, y opcional adobo. Stir until well combined.
  5. 5Fry the Bacalaitos:
  6. 6calienta 1 inch de oil in a sartén over mediano-high calienta. Drop spoonfuls de batter into the oil, flatten slightly. Fry para 2–3 minutes per side until golden y crispy. Place on a paper towel to drain.
  7. 7Prepare the Salad:
  8. 8Combine greens, tomates, cucumber, y cebolla in a bowl. Toss con aceite de oliva, limón juice, sal, y pepper.
  9. 9Plate y sirve:
  10. 10sirve 3–4 bacalaitos per person con a fresco side de salad.
