Ingredientes
- 1 lb mediano camarones, peeled y deveined 🦐
- 0.5 lb squid rings 🦑
- 0.5 lb mussels o clams (cleaned) 🐚
- 0.5 lb white pescado (cut into chunks) 🎣
- 0.5 cup crab meat (opcional) 🦀
- 1 1/2 cups mediano-grain rice 🍚
- 0.25 cup sofrito (homemade o store-bought) 🌿
- 1 pequeño cebolla, picado 🧅
- 0.5 bell pepper, picado en cubos 🫑
- 2 ajo cloves, minced 🧄
- 0.5 tsp paprika ahumada 🌶️
- 0.25 tsp cumin
- 2 tbsp tomate sauce 🍅
- 1 tbsp aceite de oliva 🫒
- 6 cups seafood stock o water con bouillon 🥣
- sal y pepper to taste 🧂
- fresco cilantro para termina 🌱
- lima wedges y avocado on the side 🍋🥑
Instrucciones
- 1saltea your base: In a grande pot, calienta aceite de oliva over mediano. Add sofrito, cebollas, bell pepper, y ajo. cocina until soft y fragrant (about 5 min).
- 2Build the flavor: Stir in tomate sauce, paprika, y cumin. Let it simmer para 2–3 min to deepen the flavor.
- 3Add the stock: Pour in seafood stock y bring to a boil. Then stir in rice y reduce calienta to medio-bajo. Cover y cocina para 20 min, stirring occasionally so it doesn’t stick.
- 4Add the seafood: Toss in camarones, squid, mussels, y pescado. Simmer para 10–12 min until seafood is fully cooked y mussels have opened.
- 5Final touches: Season con sal y pepper. Adjust the thickness con more stock if needed. It should be like a thick, soupy risotto.
- 6sirve it hot: Ladle into bowls, top con fresco cilantro, y sirve con lima y avocado on the side.
