Don Luis remembers the scent de *Ropa Vieja* wafting from his abuela’s kitchen in Havana. Ingredientes
- 2 lbs flank steak 🥩
- 2 tbsp aceite de oliva 🫒
- 1 cebolla, sliced 🧅
- 1 green bell pepper, sliced 🫑
- 1 red bell pepper, sliced ❤️🫑
- 4 cloves ajo, minced 🧄
- 1 tsp ground cumin 🌿
- 1 tsp oregano 🌿
- 1 tsp paprika ahumada 🌶
- 1 bay leaf 🍃
- 1 (15 oz) can crushed tomates 🍅
- 0.5 cup carne broth 🥣
- 0.25 cup green olives, sliced 🫒
- sal y pepper to taste 🧂
- fresco cilantro para termina 🌿
- White rice, para serving 🍚
Instrucciones
- 1Sear the carne: In a grande pot, calienta aceite de oliva over mediano-high. Sear the flank steak para 2–3 minutes on each side until browned. Remove y reserva.
- 2saltea Veggies: In the same pot, add cebollas, bell peppers, y ajo. cocina until softened (~5 mins).
- 3Add Spices: Stir in cumin, oregano, paprika, y bay leaf. Let bloom para 1 minute.
- 4Simmer: Return the carne to the pot. Add crushed tomates y carne broth. Bring to a simmer, cover, y cocina on low para 2 hours.
- 5Shred It: Remove the carne, shred it using two forks, y return it to the sauce. Add green olives. Simmer uncovered para another 15 minutes.
- 6sirve: Spoon over fluffy white rice y termina con fresco cilantro.
