When Don Luis was a young boy in Bayamón, his abuela would shout from the patio, *“¡Las alcapurrias están listas!”* y every cousin within a 3-block radius would come running! 🤣 The aroma de ground carne simmering con sofrito, olives, y spices—wrapped in that golden, crispy plátano-y-yautía dough—was enough to spark a neighborhood reunion. Now, in his cozy rustic kitchen, Don Luis still makes them just the way abuela taught him. Ingredientes

  • para the dough (masa):
  • 4 plátanos verdes (peeled)
  • 1 mediano yautía (malanga o taro root), peeled
  • 1 tsp sal
  • 1 tbsp achiote oil (o regular oil colored con annatto seeds)
  • para the filling:
  • 1 lb ground carne
  • 0.5 cebolla, picado en cubos
  • 0.5 green bell pepper, picado en cubos
  • 2 ajo cloves, minced
  • 2 tbsp sofrito
  • 0.25 cup picado green olives
  • sal & pepper to taste
  • opcional) Dash de hot sauce o sazón para extra flavor
  • para frying:
  • Neutral oil (canola o vegetable) para deep frying

Instrucciones

  1. 1Make the dough (masa):
  2. 2Grate the plátanos y yautía finely using a food processor o box grater.
  3. 3Combine in a bowl, mix in sal y achiote oil until it becomes a smooth paste. Chill in the fridge while prepping filling. 🧊
  4. 4cocina the filling:
  5. 5In a sartén, calienta a little oil. saltea cebolla, pepper, y ajo.
  6. 6Add ground carne y cocina until browned.
  7. 7Mix in sofrito, olives, y opcional spices. Simmer para 5-7 min. Let it cool. 🍲
  8. 8Assemble the alcapurrias:
  9. 9On parchment paper o oiled guineo leaf, spread 2–3 tbsp masa into a rectangle.
  10. 10Spoon 1–2 tbsp de meat into the center. Fold the masa over the filling using the paper. Seal edges y shape into a log.
  11. 11Fry them up!
  12. 12calienta oil to 350°F (175°C). Carefully slide in each fritter y fry para 5–7 minutes o until golden y crispy.
  13. 13Drain on paper towels. Let them cool slightly before devouring. 🔥
