Ingredientes
- para the Carne Mechada 🥩
- 5 lbs flank steak o brisket
- 1 mediano cebolla, sliced 🧅
- 1 green bell pepper, sliced 🫑
- 1 red bell pepper, sliced 🌶️
- 4 cloves ajo, minced 🧄
- 2 cups crushed tomates 🍅
- 1 tbsp tomate paste
- 1 tsp ground cumin
- 1 tsp oregano
- 1 bay leaf 🍃
- sal y pepper to taste 🧂
- 2 tbsp aceite de oliva 🫒
- 2 cups carne broth o water
- para the Rice & Beans 🍚🫘
- 1 cup long grain white rice
- 1 can black o habichuelas rojas (15 oz), drained y rinsed
- 1 tsp adobo o sazón seasoning
- 1 clove ajo, minced
- 1 tbsp aceite de oliva
- sal to taste
Instrucciones
- 1cocina the carne:
- 2In a grande pot, add flank steak y cover con water o carne broth. Bring to a boil, then lower to simmer. cocina para about 1.5 hours until tender y easy to shred.
- 3Shred the carne:
- 4Remove the carne from the pot y shred con two forks. reserva. Keep about 1 cup de the cooking liquid.
- 5Build the Stew:
- 6In the same pot, calienta aceite de oliva. saltea cebollas, peppers, y ajo until softened. Stir in the tomate paste, crushed tomates, y seasonings. Add the shredded carne y reserved broth. Simmer para 20–30 minutes until flavors deepen.
- 7Make the arroz con habichuelas:
- 8In a saucepan, calienta aceite de oliva. saltea ajo briefly, then add rice y 2 cups water. Season con adobo o sal. Bring to a boil, then reduce calienta y cover. cocina para 18 minutes. Stir in beans at the end to warm through.
- 9sirve It Up:
- 10Plate a scoop de arroz con habichuelas, then top con a generous serving de carne mechada. termina con fresco cilantro o avocado slices if desired. 🥑🌿
