The kids set the table, trying to sneak tastes, while Luna y Toby nap under the kitchen bench, tails wagging from the scent alone. Ingredientes
- para the Pernil (Roast cerdo Shoulder) 🍖
- 5–6 lb cerdo shoulder (bone-in)
- 8 cloves ajo 🧄
- 1 tbsp sal 🧂
- 1 tbsp pimienta negra
- 1 tbsp oregano 🌿
- 1 tbsp adobo seasoning
- 1 tsp cumin
- 2 tsp paprika ahumada
- 0.25 cup aceite de oliva 🫒
- Juice de 1 orange 🍊
- Juice de 1 lima 🍋
- 2 tbsp white vinegar

- 2 cups mediano grain white rice
- 1 can corn (15 oz), drained
- 2 tbsp sofrito 🫕
- 1 packet sazón con achiote
- 0.5 tsp sal
- 2 tbsp vegetable oil
- 3 cups water
Instrucciones
- 1Pernil
- 2In a mortar o food processor, mash ajo, sal, pepper, oregano, adobo, cumin, paprika, aceite de oliva, citrus juices, y vinegar into a marinade.
- 3Using a pequeño knife, poke holes all over the cerdo shoulder y stuff marinade into the slits. Rub the rest all over the cerdo.
- 4Let marinate overnight (o minimum 2 hours).
- 5Preheat oven to 325°F (163°C). Place cerdo in a roasting pan, cover con foil.
- 6Roast covered para 3 hours, then uncover y roast another 30–45 minutes until crispy y golden. Internal temp should reach 185–190°F.
- 7Arroz con Maíz
- 8calienta oil in a mediano pot. Add sofrito y cocina para 2–3 minutes.
- 9Stir in sazón, rice, y corn. Mix well.
- 10Add water y sal. Bring to a boil, then reduce calienta, cover, y simmer para 25 minutes o until rice is tender.
- 11Fluff con fork y sirve warm next to the pernil.
