Ingredientes
- para the Crispy Pernil:
- 2 lbs cerdo shoulder (pernil style) 🐖
- 4 cloves ajo, minced 🧄
- 1 tbsp oregano 🌿
- 1 tsp cumin
- 1 packet de Sazón con achiote
- sal & pepper to taste 🧂
- 2 tbsp aceite de oliva
- Juice de 1 lima 🍋
- para the Bao Buns:
- 6 store-bought bao buns o homemade (steamed) ☁️
- Sesame oil (para brushing)
- para the cilantro Slaw:
- 1 cup shredded cabbage (mix de purple y green) 🥬
- 0.5 cup shredded carrots 🥕
- 0.25 cup picado fresco cilantro 🌿
- 2 tbsp lima juice 🍋
- 1 tbsp honey 🍯
- 1 tbsp mayonnaise o Greek yogurt
- sal to taste
Instrucciones
- 1Marinate the pernil:
- 2Combine ajo, oregano, cumin, sazon, sal, pepper, aceite de oliva, y lima juice. Rub it all over the cerdo. Let it marinate para at least 1 hour (overnight if possible).
- 3Roast the pernil:
- 4Preheat oven to 325°F (165°C). Cover the cerdo y roast para 2.5 hours until fork-tender. Let cool slightly, then shred.
- 5Crisp it up!
- 6calienta a pan over mediano-high calienta con a little oil. Add shredded cerdo y crisp up the edges until golden brown y crunchy. 🔥
- 7Make the slaw:
- 8Mix cabbage, carrots, cilantro, lima juice, honey, mayo/yogurt, y a pinch de sal. Toss until everything is coated y flavorful. Chill in fridge.
- 9Steam the bao buns:
- 10Steam the buns according to package instructions until soft y fluffy.
- 11Assemble:
- 12Open each bao y add a generous spoonful de crispy pernil. Top con a scoop de cilantro slaw. opcional: drizzle con spicy mayo o a few pickled jalapeños. 🌶️
