Ingredientes
- para the guayaba BBQ Ribs:
- 2 lbs cerdo ribs (baby back o spare ribs)
- 1 tbsp sal
- 1 tbsp pimienta negra
- 1 tbsp paprika ahumada
- 1 tsp ajo en polvo
- 1 tsp cebolla powder
- 1 tsp cumin
- 0.5 tsp chili powder
- 2 tbsp aceite de oliva
- para the guayaba BBQ Sauce:
- 1 cup guayaba paste (melted)
- 0.5 cup ketchup
- 0.25 cup apple cider vinegar
- 2 tbsp Worcestershire sauce
- 2 tbsp honey
- 1 tbsp Dijon mustard
- 1 tsp ajo en polvo
- 1 tsp paprika ahumada
- 0.5 tsp red pepper flakes (opcional, para calienta)
- 0.5 cup water
- para the Mashed Yucca:
- 2 lbs yucca (cassava), peeled y picado
- 2 tbsp mantequilla
- 0.5 cup warm leche o coco leche
- 2 cloves ajo, minced
- sal & pepper to taste
Instrucciones
- 11️⃣ Prepare the Ribs – Preheat oven to 275°F (135°C). Pat the ribs dry y rub them con aceite de oliva. Mix the dry spices y coat the ribs evenly. Wrap in foil y bake para 2.5 hours until tender. 🍖✨
- 22️⃣ Make the guayaba BBQ Sauce – In a saucepan, combine guayaba paste, ketchup, vinegar, Worcestershire sauce, honey, mustard, ajo en polvo, paprika ahumada, y red pepper flakes. Simmer para 10 minutes until smooth y thick. 🍯🔥
- 33️⃣ Glaze & Broil – Remove the ribs from the oven, brush generously con guayaba BBQ sauce, y broil para 5 minutes until caramelized. 🔥🥄
- 44️⃣ Boil the Yucca – While the ribs are baking, boil the yucca in salted water para 20 minutes until fork-tender. Drain y remove any tough fibers. 🥔💦
- 55️⃣ Mash the Yucca – Mash con mantequilla, warm leche, ajo, sal, y pepper until smooth. Adjust consistency con extra leche if needed. 🧈🥛
- 66️⃣ sirve & disfruta – Plate the ribs con extra guayaba BBQ sauce on the side, y sirve con a generous scoop de mashed yucca. 🍽️🌿
