Ingredients
- For the Guava BBQ Ribs:
- 2 lbs pork ribs (baby back or spare ribs)
- 1 tbsp salt
- 1 tbsp black pepper
- 1 tbsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- 0.5 tsp chili powder
- 2 tbsp olive oil
- For the Guava BBQ Sauce:
- 1 cup guava paste (melted)
- 0.5 cup ketchup
- 0.25 cup apple cider vinegar
- 2 tbsp Worcestershire sauce
- 2 tbsp honey
- 1 tbsp Dijon mustard
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 0.5 tsp red pepper flakes (optional, for heat)
- 0.5 cup water
- For the Mashed Yucca:
- 2 lbs yucca (cassava), peeled and chopped
- 2 tbsp butter
- 0.5 cup warm milk or coconut milk
- 2 cloves garlic, minced
- Salt & pepper to taste
Instructions
- 11️⃣ Prepare the Ribs – Preheat oven to 275°F (135°C). Pat the ribs dry and rub them with olive oil. Mix the dry spices and coat the ribs evenly. Wrap in foil and bake for 2.5 hours until tender. 🍖✨
- 22️⃣ Make the Guava BBQ Sauce – In a saucepan, combine guava paste, ketchup, vinegar, Worcestershire sauce, honey, mustard, garlic powder, smoked paprika, and red pepper flakes. Simmer for 10 minutes until smooth and thick. 🍯🔥
- 33️⃣ Glaze & Broil – Remove the ribs from the oven, brush generously with guava BBQ sauce, and broil for 5 minutes until caramelized. 🔥🥄
- 44️⃣ Boil the Yucca – While the ribs are baking, boil the yucca in salted water for 20 minutes until fork-tender. Drain and remove any tough fibers. 🥔💦
