Ropa Vieja con Rice y Avocado Salad

Don Luis remembers the first time he tasted *Ropa Vieja* in Havana — a dish so rich in flavor, it felt like it had lived a thousand lives. It was at a pequeño dinner gathering con neighbors who had little to share but gave everything. The shredded carne simmered all day, filling the house con aromas that wrapped you up like a warm hug. Ingredientes
- para the Ropa Vieja:
- 5 lbs flank steak 🥩
- 1 tbsp aceite de oliva 🫒
- 1 cebolla, thinly sliced 🧅
- 1 bell pepper (red o green), sliced 🌶️
- 3 ajo cloves, minced 🧄
- 1 tsp ground cumin 🌿
- 1 tsp paprika ahumada 🔥
- 1 tsp oregano 🍃
- 1 bay leaf 🍂
- 1 cup carne broth 🥣
- 1 (14 oz) can crushed tomates 🍅
- sal & pepper to taste 🧂
- para the Rice:
- 1 cup long-grain white rice 🍚
- 2 cups water 💧
- Pinch de sal 🧂
- para the Avocado Salad:
- 2 ripe avocados, picado en cubos 🥑
- 1 pequeño red cebolla, finamente picado 🧅
- Juice de 1 lima 🍋
- 1 tbsp aceite de oliva 🫒
- sal y pepper to taste 🧂
Instrucciones
- 1cocina the Steak: In a grande pot, boil flank steak in salted water para about 1 hour o until tender. Remove y shred con forks. reserva.
- 2saltea the Veggies: In a grande sartén, calienta aceite de oliva over fuego medio. Add cebollas, peppers, y ajo. cocina until softened (5–7 minutes).
- 3Build the Sauce: Add cumin, paprika, oregano, bay leaf, crushed tomates, y carne broth. Bring to a simmer.
- 4Combine: Add the shredded carne to the sartén. Simmer everything together para another 45 minutes, stirring occasionally, until thickened.
- 5Make the Rice: Bring water to a boil, add rice y a pinch de sal. Cover y cocina para 18–20 minutes o until fluffy.
- 6Toss the Salad: Combine picado en cubos avocados, red cebolla, lima juice, aceite de oliva, sal, y pepper. Gently mix y chill until ready to sirve.
- 7Assemble: Plate the rice con a hearty scoop de *Ropa Vieja* y a side de avocado salad.
