Ropa Vieja con White Rice y Avocado

Ingredientes
- 2 lbs flank steak o chuck roast 🥩
- 1 tbsp aceite de oliva 🫒
- 1 grande cebolla, sliced 🧅
- 1 red bell pepper, sliced ❤️
- 1 green bell pepper, sliced 💚
- 4 ajo cloves, minced 🧄
- 1 tsp cumin 🌱
- 1 tsp paprika ahumada 🌶️
- 1 bay leaf 🍃
- 1 cup tomate sauce 🍅
- 0.5 cup carne broth 🥣
- sal & pepper to taste 🧂
- 2 cups cooked white rice 🍚
- 2 ripe avocados, sliced 🥑
- opcional: green olives para termina 🫒
Instrucciones
- 1Sear the carne: In a grande pot, calienta aceite de oliva y sear the carne on both sides until browned. Remove y reserva.
- 2saltea the veggies: In the same pot, add cebollas, bell peppers, y ajo. saltea until soft y fragrant.
- 3Add seasonings: Stir in cumin, paprika ahumada, bay leaf, tomate sauce, y carne broth. Bring to a simmer.
- 4Simmer the carne: Return the carne to the pot, cover, y cocina on low calienta para 2 hours until tender.
- 5Shred & combine: Remove the carne, shred it con forks, then return it to the sauce. Mix well y simmer uncovered para 10 more minutes.
- 6sirve it up: Plate the ropa vieja over a bed de white rice y top con avocado slices. Add olives if you like that briny pop!
