Ingredientes
- para the Bacalaítos:
- 0.5 lb salted codfish (bacalao), rinsed y soaked 🐟
- 1 cup all-purpose flour 🌾
- 0.5 tsp baking powder
- 0.5 tsp ground pimienta negra 🧂
- 0.5 tsp sazón con annatto (o your fave all-purpose seasoning)
- 2 ajo cloves, minced 🧄
- 0.25 cup picado fresco cilantro 🌿
- 0.5 cup finamente picado cebolla 🧅
- 0.75 cup water (adjust para batter consistency) 💧
- Vegetable oil para frying 🛢️
- para the Avocado Aioli:
- 1 ripe avocado 🥑
- 2 tbsp mayonnaise
- 1 ajo clove
- 1 tbsp lima juice 🍋
- Pinch de sal y pepper
- opcional: pinch de cumin o paprika ahumada
Instrucciones
- 1Prep the Cod: Soak the salted cod overnight o para at least 4 hours, changing the water 2–3 times. Then boil para 10 mins, let it cool, y shred into pequeño pieces.
- 2Mix the Batter: In a bowl, combine flour, baking powder, sazón, pimienta negra, ajo, cebolla, y cilantro. Slowly stir in the water to form a thick but pourable batter. Add in the shredded cod.
- 3Fry Time! In a sartén, calienta oil over mediano-high calienta. Drop 2–3 tbsp de batter per fritter y flatten slightly. Fry until golden brown on both sides, about 2–3 minutes each. Drain on paper towels.
- 4Make the Aioli: In a food processor o blender, mix the avocado, mayo, ajo, lima juice, sal, y pepper until smooth y creamy.
- 5sirve: Plate the bacalaítos y sirve con a generous dollop de avocado aioli on the side o drizzle on top.
