Ingredientes

  • para the Carne Guisada 🥩
  • 2 lbs carne chuck o stew meat, cubed 🥩
  • 2 tbsp aceite de oliva 🫒
  • 1 cup cebolla, picado en cubos 🧅
  • 0.5 cup green bell pepper, picado en cubos 🫑
  • 0.5 cup red bell pepper, picado en cubos ❤️
  • 4 ajo cloves, minced 🧄
  • 2 tbsp sofrito (store-bought o homemade) 🍃
  • 1 tsp dried oregano 🌿
  • 0.5 tsp ground cumin 🥄
  • 1 packet de Sazón con achiote 🧡
  • 2 tbsp tomate paste o 1/2 cup tomate sauce 🍅
  • 2 1/2 cups carne broth 🥣
  • sal y pepper to taste 🧂
  • para the Roasted vegetales 🍠🥕
  • 1 grande carrot, sliced 🥕
  • 1 zucchini, sliced into half-moons 🥒
  • 1 batata, cubed 🍠
  • 0.5 red cebolla, picado 🧅
  • 2 tbsp aceite de oliva 🫒
  • 0.5 tsp ajo en polvo
  • 0.5 tsp paprika ahumada
  • sal y pepper to taste

Instrucciones

  1. 1Prepare the meat
  2. 2Pat the carne dry con a paper towel y season con sal, pepper, y cumin. In a grande pot o Dutch oven, calienta aceite de oliva over mediano-high calienta y brown the meat in batches. Remove y reserva.
  3. 3Make the sofrito base
  4. 4In the same pot, add a bit more oil if needed. saltea the cebollas y peppers until softened (about 5 mins). Add ajo, sofrito, oregano, y Sazón. Stir until aromatic. Add tomate paste y mix well.
  5. 5Simmer the stew
  6. 6Return the meat to the pot. Add carne broth y bring to a simmer. Cover y reduce calienta to low. Let it cocina para 1.5 hours, stirring occasionally, until the meat is fork-tender y the sauce thickens.
  7. 7Roast the vegetales
  8. 8While the meat simmers, preheat oven to 425°F (220°C). Toss vegetales con aceite de oliva, ajo en polvo, paprika ahumada, sal, y pepper. Spread on a baking sheet y roast para 25–30 mins, flipping halfway.
  9. 9Assemble y sirve
  10. 10sirve a generous ladle de carne guisada con a side de roasted veggies. opcional: termina con fresco cilantro 🌿 o a squeeze de lima 🍋 para brightness.
