Ingredientes
- para the Asopao de Pollo:
- 1 lb boneless pollo thighs, picado en cubos
- 0.5 cup sofrito (homemade o store-bought)
- 0.25 cup tomate sauce
- 3 cloves ajo, minced
- 1 pequeño cebolla, picado
- 0.25 cup picado cilantro
- 1 tsp oregano
- 0.5 tsp paprika ahumada
- 1 cup mediano grain rice (washed)
- sal y pepper to taste
- 2 tbsp aceite de oliva
- 1 tbsp limón o lima juice
- 5 cups pollo broth o water con bouillon
- para the plátano Chips (Tostones Finitos):
- 2 plátanos verdes, peeled
- sal to taste
- Oil para frying
Instrucciones
- 1Asopao de Pollo:
- 2In a grande pot, calienta aceite de oliva over mediano. Add ajo, cebolla, y sofrito. saltea until fragrant (about 3–4 min).
- 3Add tomate sauce, oregano, paprika, y picado en cubos pollo. cocina until pollo is lightly browned.
- 4Stir in rice y broth. Bring to a boil, then reduce calienta y simmer uncovered para about 30 minutes, stirring occasionally.
- 5Add picado cilantro, lima juice, sal, y pepper. Simmer until rice is tender y the soup is thick like a stew.
- 6plátano Chips:
- 7Slice plátanos verdes into thin rounds using a mandoline o knife.
- 8calienta oil in a frying pan over mediano-high. Fry plátano slices in batches until golden y crispy.
- 9Drain on paper towels y sprinkle con sal while hot.
