Lomo Saltado with Cilantro Rice

Ingredients

  • For the Lomo Saltado:
  • 1 lb beef sirloin, sliced into thin strips
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp red wine vinegar
  • 1 tsp cumin
  • 0.5 tsp black pepper
  • 1 tbsp vegetable oil
  • 0.5 red onion, sliced
  • 1 red bell pepper, sliced
  • 1 small tomato, sliced into wedges
  • 2 cloves garlic, minced
  • 0.25 cup beef broth
  • 1 cup frozen fries or fresh potato fries 🍟
  • 1 tbsp fresh cilantro, chopped 🌿
  • For the Cilantro Rice:
  • 1 ½ cups white rice 🍚
  • 3 cups chicken broth
  • 1 cup cilantro leaves, blended with ½ cup water
  • 1 tbsp olive oil
  • 1 small garlic clove, minced
  • 0.5 tsp salt

Instructions

  1. 11️⃣ Make the Cilantro Rice
  2. 2In a pot, heat olive oil over medium heat and sauté garlic for 30 seconds.
  3. 3Add rice and stir for 1 minute, coating it in the oil.
  4. 4Pour in chicken broth and blended cilantro mixture, then add salt.
  5. 5Bring to a boil, then cover and simmer on low heat for 20 minutes until fluffy.
  6. 62️⃣ Stir-Fry the Beef
  7. 7In a bowl, toss the beef with soy sauce, oyster sauce, vinegar, cumin, and black pepper.
  8. 8Heat oil in a wok or large pan over high heat. Sear the beef for 2-3 minutes, then remove.
  9. 93️⃣ Cook the Vegetables & Sauce
  10. 10In the same pan, sauté onions and bell peppers for 2 minutes.
  11. 11Add garlic and tomato wedges, then pour in beef broth. Cook for 1 minute.
  12. 12Return the beef to the pan and toss everything together for 1 more minute.
  13. 134️⃣ Add the Fries & Serve
  14. 14Cook or air fry the fries separately, then toss them into the stir-fry right before serving.
  15. 15Plate the Lomo Saltado with a side of cilantro rice and garnish with fresh cilantro.
