Ingredients
- For the Ropa Vieja:
- 2 lbs flank steak 🥩
- 1 tbsp olive oil
- 0.5 onion, sliced 🧅
- 0.5 bell pepper, sliced 🌶️
- 3 cloves garlic, minced 🧄
- 0.5 cup sofrito
- 1 cup tomato sauce 🍅
- 1 cup beef broth
- 1 tbsp tomato paste
- 1 tsp adobo seasoning
- 1 tsp sazon seasoning
- 0.5 tsp cumin
- 0.5 tsp oregano
- 0.5 tsp black pepper
- 0.5 cup green olives, sliced 🫒 (optional)
- 1 bay leaf
- Fresh cilantro for garnish 🌿
- For the Avocado Salad:
- 1 large avocado, diced 🥑
- 0.5 red onion, sliced 🧅
- 0.5 bell pepper, sliced 🌶️
- 1 tbsp olive oil
- 1 tbsp lime juice 🍋
- 0.5 tsp salt
- 0.25 tsp black pepper
- Fresh cilantro for garnish 🌿
Instructions
- 11️⃣ Cook the Beef
- 2In a large pot, heat olive oil over medium-high heat.
- 3Sear the flank steak on both sides for 3-4 minutes per side.
- 4Add beef broth, bay leaf, and ½ tsp salt. Cover and simmer on low for 2 hours until tender.
- 52️⃣ Shred the Beef & Build the Sauce
- 6Remove the beef and shred it using two forks. Set aside.
- 7In the same pot, add onions, bell peppers, and garlic. Sauté for 3 minutes.
- 8Stir in sofrito, tomato sauce, tomato paste, and all seasonings.
- 9Return the shredded beef to the pot and mix well.
- 10Let simmer for 20 more minutes, adding green olives if using.
- 113️⃣ Prepare the Avocado Salad
- 12In a bowl, combine avocado, red onion, and bell pepper.
- 13Drizzle with olive oil and lime juice.
- 14Season with salt and pepper and toss gently.

- 17Garnish with fresh cilantro and serve warm!
