Ingredients
- For the Sweet Plantains:
- 2 ripe plantains, peeled & sliced 🍌
- 1 tbsp butter 🧈
- 1 tbsp olive oil
- 0.5 tsp cinnamon (optional)
- 0.5 tsp salt
- For the Black Beans:
- 1 can black beans, drained & rinsed 🖤
- 1 tbsp olive oil
- 0.5 onion, diced 🧅
- 2 cloves garlic, minced 🧄
- 0.5 tsp cumin
- 0.5 tsp paprika
- 0.5 tsp salt
- 0.5 tsp black pepper
- 0.25 cup water or vegetable broth
- For the Tacos:
- 8 small corn tortillas 🌮
- 0.5 cup crumbled queso fresco 🧀
- 0.5 cup fresh cilantro, chopped 🌿
- 0.25 cup red onion, diced
- 1 lime, cut into wedges 🍋
Instructions
- 11️⃣ Cook the Sweet Plantains
- 2Heat butter and olive oil in a pan over medium heat.
- 3Add sliced plantains, sprinkle with cinnamon and salt, and cook for 4-5 minutes per side until golden.
- 4Set aside on a plate.
- 52️⃣ Prepare the Black Beans
- 6In the same pan, heat olive oil and sauté onions and garlic for 2 minutes.
- 7Stir in black beans, cumin, paprika, salt, and black pepper.
- 8Add water or broth and simmer for 5 minutes, mashing some beans for texture.
- 93️⃣ Assemble the Tacos
- 10Warm corn tortillas in a dry pan for 30 seconds per side.
- 11Fill each tortilla with black beans and sweet plantains.
- 12Top with queso fresco, red onion, and fresh cilantro.
- 13Squeeze lime juice over the top and serve!
