Ingredients

  • 4 large eggs, scrambled
  • 1 ½ cups pulled pork (leftover or pre-cooked)
  • 1 cup shredded cheese (cheddar or pepper jack)
  • 2 tablespoons chopped green onions or cilantro (optional)
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon onion powder
  • 10 empanada discs (store-bought or homemade)
  • 1 egg (for egg wash)
  • Optional: hot sauce or salsa for dipping

Instructions

  1. 1Preheat oven to 375°F (190°C). Line a baking tray with parchment paper.
  2. 2Scramble the eggs until just set, season lightly with salt, pepper, and a pinch of garlic and onion powder.
  3. 3In a bowl, combine pulled pork, scrambled eggs, shredded cheese, and green onions or cilantro.
  4. 4Lay out the empanada discs. Spoon about 2 tablespoons of filling into the center of each.
  5. 5Fold over and press the edges with a fork to seal.
  6. 6Brush with egg wash on top for golden color.
  7. 7Bake for 18–22 minutes, or until golden brown and crispy.
  8. 8Let cool slightly. Serve warm with your favorite salsa or fruit juice on the side!
