Peruvian Lomo Saltado

Story

Don Luis still remembers his first time in Lima, walking through the vibrant streets where the scent of sizzling meat and soy sauce mixed with the coastal breeze. A friendly señora at a tiny street corner stall handed him a plate of Lomo Saltado that changed everything 🌆🍛. He took one bite and was instantly hooked. “Is this Chinese food? Is it Peruvian?!” he asked. She winked and said, “It’s both, mijo. That’s what makes us special.” Since then, Don Luis has made it his mission to perfect this dish, teaching each generation how to bring together cultures through food. And now, it’s your turn! 👨‍🍳💫

Ingredients

  • 1 lb sirloin steak, sliced into strips
  • 1 red onion, thick slices
  • 2 Roma tomatoes, cut into wedges
  • 1 yellow chili (ají amarillo), sliced (or substitute with jalapeño 🌶️)
  • 2 garlic cloves, minced
  • Salt and pepper to taste
  • 3 tbsp soy sauce
  • 1 tbsp red wine vinegar
  • 2 russet potatoes, cut into fries
  • Fresh cilantro, chopped (for garnish)
  • Cooked white rice (for serving)
  • Vegetable oil for frying

Instructions

  1. 1Start with the fries! 🍟 In a deep pan or air fryer, cook the potato fries until golden and crispy. Drain on paper towels and set aside.
  2. 2Sear the steak: In a hot wok or skillet, add a bit of oil and sear the steak strips quickly over high heat until browned but still juicy. Remove and set aside.
  3. 3Veggie time! Add a touch more oil and sauté onions and ají amarillo until just softened. Then toss in garlic and tomato wedges. Cook for 2 minutes.
  4. 4Bring it all together: Return steak to the pan. Add soy sauce and red wine vinegar. Stir-fry everything for about 2 minutes more until the flavors dance 💃🏽.
  5. 5Mix in the fries at the very end so they soak up all the goodness without getting soggy.
  6. 6Serve hot with fluffy white rice and sprinkle with fresh cilantro 🌿.
