- 1 tbsp flour
- 1 cup milk 🥛
- 1 cup shredded sharp cheddar cheese 🧀

Instructions
- 1Make the dough: In a saucepan, bring water, butter, salt, and sugar to a boil. Remove from heat and stir in cornmeal. Mix until a thick dough forms. Let it cool slightly, then mix in shredded cheese.
- 2Shape the sorullitos: Once the dough is cool enough to handle, roll small portions into cigar-like shapes (about 3 inches long).
- 3Fry ‘em up: Heat oil in a pan (about 350°F/175°C) and fry the sorullitos until golden brown, 3–4 minutes per side. Drain on paper towels.
- 4Make the dip: In a saucepan, melt butter and whisk in flour to make a roux. Slowly add milk, stirring constantly, until smooth. Add cheese and stir until melted. Add salt (and cayenne, if using).
- 5Dip and serve: Serve hot sorullitos with the cheese dip on the side. Perfect for sharing!
